This hunting season my husband and I were both blessed to get a deer.  Now, my deer was admiringly, small and young, so we made most of it into delicious steaks.  My husband on the other hand shot great-grand-father big buck.  Yes, quite a story, but for another day.

Few things float my boat like making my own food.  I seriously had the best time grinding 40 pounds of meat, then playing with spices until I had three amazing sausage recipes. Here is the third!

PSSST!  Don’t be surprised if it works great for ground turkey as well!!!

Maple Venison Sausage

  • 15lb ground venison (I suggest adding at least 20% fat)
  • 2 tablespoons thyme
  • 1 tablespoon marjoram
  • 6 tablespoons sea salt
  • 6 tablespoons sage
  • 3 tablespoons black pepper
  • 1 1/2 cup maple syrup
  • 1 - 3 tablespoon maple extract (depending on your taste preference)


1 venison sausageMix all ingredients together well.
2 venison sausageFreeze in appropriate portions for your family. It will taste and keep best if you shape it into a log, then slice off rounds when it comes time to cook. I like to put my logs in plastic bread sacks to better protect the flavor in the freezer. Then I wrap them in freezer paper!
3 venison sausageWrap and label in freezer paper. Store in freezer until ready to cook for an amazing breakfast treat!
